  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 -- (3-pound) bone-in pork shoulder or butt
  • 1/2 cup chopped fresh parsley
  • 1 -- lemon, finely grated rind and juice
  • 2 garlic cloves, minced


  1. Combine coriander and next four ingredients (coriander through pepper). Rub over pork. Place in slow-cooker and cook according to manufacturer's instructions. Before serving add parsley, lemon zest, lemon juice and garlic.
